iTunes 10.5 beta not only allows beta developers to Sync their favorite music, apps and to to iOS 5 devices, it also enables more iCloud-related features than iTunes 10.3. iTunes 10.5 also brings some minor graphics changes to better match Mac OS X Lion. You disable/enable Automatic Downloads form the Settings under a new preference panel.
